Mediterranean Chicken Hot Pot Recipe
For today’s ingredients you will need:
8-10 Chicken Thigh fillets
1 onion, chopped up
1-2 minced Garlic cloves
2 tbsp harissa spice
1 tbsp sweet smoked paprika powder
200ml passata
300ml water
2 tomatoes, roughly chopped
3 heaped tbsp of Ajvar
Step 1
Grab a deep, large soup saucepan. Add some oil and heat over medium to high heat.
Step 2
Add your onion and saute until softened. This can take anywhere from 1-3 minutes.
Step 3
Turn heat to low and add garlic, all of your spices: harrisa spice- paprika- salt - pepper
Step 4
Stir it all to combine spices and onion together.
Step 5
Then add the chicken thigh fillets and stir to coat the chicken in the spice mix.
Step 6
Cook on medium heat for 5 minutes, turning the chicken filets over every so often until
the chicken is just whitened on the outside.
Step 7
Now add the liquids; passata and water, stir in the chopped tomatoes and bring to a boil.
Step 8
Bring the temperature back down to a soft boil, cover the pot and leave it to lightly simmer at this pace for 20-30 minutes.
Step 9
Remove the lid, and Stir in the Ajvar.
Step 10
Simmer, uncovered for another 30-40 minutes on low, to allow the sauce to thicken.
Step 11
Once chicken is easily falling apart, remove from heat and serve with a side of choice.
